Beef Stroganoff Made With Leftover Steak

An easy leftover roast beef stroganoff recipe, delicious with egg noodles or rice! On the table in just 30 minutes!

It's creamy and indulgent, quick to make, and best of all it's a great recipe for using up leftover roast beef from your Sunday roast! If you don't have any leftover roast beef, don't worry, it can also be made with steak!

My family loves slow cooker roast beef for Sunday lunch, but I always end up with loads of leftovers (bearing in mind I serve it with ALL the trimmings...polenta roast potatoes, Yorkshire puddings, and about 5 different vegetables)!

Whilst beef sandwiches are great (with plenty of salad cream), this easy beef stroganoff is the perfect recipe for using up leftover sliced roast beef!

🛒 Ingredients

Ingredients needed to make leftover roast beef stroganoff.
  • Leftover Roast Beef - I usually roast a topside of beef, but any leftover beef joint would be fine to use. You'll need about 700g.
  • Mushrooms - chestnut or white mushrooms.
  • Onion - finely chopped.
  • Garlic - 2 cloves, fonely chopped.
  • Olive Oil - for frying the onions and galric. A regular light olive oil is fine.
  • Tomato Puree - you'll need 1 tablespoon.
  • Beef Stock - from a stock pot or cube.
  • Smoked Paprika
  • Dijon Mustard
  • Dried Italian Herbs
  • Creme Fraiche - or soured cream. I always have creme fraiche in my fridge so usually just use that!
  • Parsley - freshly chopped to sprinkle on as a garnish.

🔪 How to make leftover roast beef stroganoff

  1. Heat the oil in a frying pan and gently fry the onions and garlic over a medium heat for 4-5 minutes.
  2. Turn the heat up and add in the sliced mushrooms (and fresh steak strips if you don't have any leftover roast beef - see top tips below), and cook for a further 2-3 minutes until the mushrooms are tender.
  3. Stir in the beef stock, tomato puree, smoked paprika, dijon mustard and dried herbs. Simmer for 10 minutes on a low heat.
  4. Stir in the creme fraiche (or soured cream) and leftover roast beef (which you will need to cut into strips). Simmer for 5 minutes and serve with parsley.

💭 Top tips

  • If you don't have any leftover roast beef, slice 2 medium sized steaks into strips and add them to the pan at the same time as the mushrooms.
  • If you have any vegetables left over from your Sunday roast, serve them alongside the stroganoff to stretch the meal out further!

Beef stroganoff is delicious served with rice, egg noodles, and even Parmentier potatoes!

A side of green vegetables usually goes down well too, like my roasted Tenderstem broccoli, or oven-roasted Brussels Sprouts!

  • Use leftover roast pork or chicken instead of beef.
  • Make a healthy beef stroganoff by replacing the creme fraiche or sour cream with half fat creme fraiche.
  • If I'm serving this to my kids, I hold the parsley (they don't like their food sprinkled with 'green stuff' apparently). Put the chopped parsley into a small bowl on the table, and then it's there for those who do want the green adornment!
